DIY Crabby Croissant Sandwiches

Out of all of the projects I made for our Sea Party, these little crabby guys were definitely one of my favorites, and SOOOOOO simple to make!  All party-goers got a little chuckle as they walked up to the refreshment table and spotted these little guys.  I remember overhearing someone say, “Those little crabby sandwiches are just too cute to eat!”

Ha!  (they ended up changing their mind, as I later walked by and noticed their plate sitting on the table with two homeless eyeball toothpicks laying on it)

Supplies:

  • Packet of toothpicks
  • Packet of googly eyes
  • Box of croissants
  • A batch of your favorite chicken or tuna salad

Tools:

  • Hot glue gun
  • Knife (for cutting croissants in half)

Hot glue a handful of googly eyes to toothpicks.  You will need 2 toothpicks for each sandwich so make as many as you will need

Now make your favorite batch of chicken or tuna salad.

Here is a scrumptious chicken salad recipe that I love using:

Chicken Salad

Yield – 20 crab croissants

  • 3 12-oz cans canned chicken breast (I get mine from Costco)
  • 1 C. seedless red grapes – halved
  • 1 C. cashew pieces
  • 1 C. chopped celery
  • ½ C. mayonaise
  • ½ C. sour cream
  • ½ Tbsp. lemon juice
  • ½ tsp. dill weed
  • ½ tsp. onion salt
  • 20 large croissants

Mix mayo, sour cream, lemon juice, dill weed, and onion salt together to make the dressing. Drain chicken and break up large pieces.  Add grapes, cashews, and celery to the chicken and stir together.  Stir in the dressing until well-mixed.  Refrigerate until ready to use.  Serve on croissants or multigrain breads.

Cut croissant in half and stuff with chicken or tuna salad

Now just stick two toothpick eyes into the top of each sandwich…instant crabby croissants!
